Hey Veg-J! I noticed the ham in the potato salad mostly from reading the label- they also occasionally add wheat (I assume from soy sauce). The allergen notice at the end of the ingredients is really useful for showing milk, pork, eggs, wheat, and I think soy. :) I'll have to try thinning the mayonnaise with milk. This was a bit unusual as Japanese potato salad goes, but it was originally written in Japanese so I comforted myself with that. I'll have to try corn in my potato salad. They used to put lettuce in the potato salad at our local suupa- I liked it but it shortened the life of the salad. My feelings about eggs are mixed. While I like an egg salad or deviled egg occasionally, I'm just not that crazy about eggs. I like how some Japanese potato salads don't use eggs. White pepper... hmmm.. Ok! I see potato salad in my future. I did eat quite a lot of it when we lived there, but that's been a while now. *sniff*

Always glad to get a non-spam comment on an older post- Yay! :D Thinking about what to send... hmmm..

SS:

Just looking through your recipe index -- impressive! and I noticed this recipe for Japanese-style potato salad. I love potato salad and have to make it at home these days because the supermarket always adds ham. I think a lot of home cooks here add it too. You might not notice it because it's cut into very small squares and it's the thin salad ham, kind of hidden in the mashed potatoes and mayo. It adds a lot of flavour, though. Eggs are often added too, though they are soft and mixed through the mayonnaise rather than in chunks.

These days corn, along with carrots, is the big favourite to add to potato salad.

Instead of salad dressing they thin the mayonnaise with milk. You might also try white pepper as a seasoning. It's the standard pepper here and really adds a different flavour to dishes. :)
