		<description>Wow -- that is really scary about the exploding eggplant.  I hope you are okay!!!  I never really fully understood before why recipes ask you to poke holes in big veggies with skins before baking them.  Though I guess it makes sense now that you mention it.

My current favorite thing to do with an eggplant is to cut it into vaguely one-inch cubes, toss with some oil and a little salt, and then roast it under the broiler until it is golden brown on all sides.  It is fabulous like that!!  I have a recipe where you mix eggplant that was cooked that way with some rice, vegan tzatziki sauce, maybe some other veggies (broccoli, red bell pepper, cauliflower, etc.), and roll it up in a homemade GF tortilla.  It&#039;s my attempt to duplicate a dish from a restaurant that I used to love.  It is fabulous!!!

Anyway, I am way far off on a tangent......

Back to your posting: Are you interested in lentil recipes?  I&#039;d be happy to send you the recipe that turned me into a vegetarian.  It has lentils.  Let me know if you&#039;re interested.</description>
