Hey Valerie, In Kim&#039;s recipe she had us mix 2 Tablespoons ground Chia Seeds with 6 Tablespoons HOT water and then leave them until they became this gooey gel-like substance. They seemed to do their egg replacing duty. BUT, it may be just my not being used to the flavor, but so far I think I still prefer flaxseed eggs for most applications because they seem more neutral. Chia does add this amazing texture to things like drinks though. I may not give up on them yet. ;)
