Brownies from a Gluten Free Pantry

gfpbrownie.jpg [1] Ever since I bought Rebecca Reilly’s book on Gluten Free Baking, I’ve been baking a lot of my own sweets from scratch. Not that I bake sweets often- in fact, Karina’s apple cake was the exception rather than the rule this month. One of the last recipes I made from Reilly’s book was a homemade brownie recipe. My guests seemed to like them- but you know, they didn’t really do it for me. When I have chocolate, I want CHOCOLATE, in all its fudgey, truffley glory. But while reading Karina’s site, I stumbled across her Gluten Free Brownie Taste Test [2] entry. DH loves sweets in all forms, and I thought maybe I was missing out- why not try these mixes and see if one of them can compete with homemade brownies or fudge? You have to love how easy it is to make a mix. So, yesterday, as I lay feverish on the couch, taken down by a beginning of the term cold with only enough strength to turn the pages of this book I was translating, it occurred to me that perhaps some GF brownies would make me feel better. I took down the Gluten Free pantry brownie mix from the cupboard. It called for butter, the mix, and eggs. [3] Mix and bake. I can’t remember the last time I made something with so few ingredients. So, I baked my brownies and even though I was technically supposed to cool and freeze them before i cut into them… it didn’t quite happen that way. When they had cooled slightly (from molten chocolate lava to a not quite tongue singeing temperature), I cut a slice and chomped it in all its chocolate goodness. My impression? It was good. It was chocolate. It was a brownie. But fudge it was not. When it comes down to it, I’m all about the fudge, and not so much about cake like brownies. DH on the other hand likes his brownies, and he liked these brownies especially. While I didn’t manage to weasel a number out of him, he kept stealing pieces, and saying “Mmmm, this is good!” So, they managed to win over the non gluten free boy. And I think, if you like brownies, they will win you over too, no matter how long you have or haven’t been gluten free.
