This winter has been a hard one for our family at the house of yum. It seems like every week, Toddler Yum comes down with a new illness. The most recent one resulted in my mom and then me coming down with a miserable case of pneumonia. I would certainly like to give my lungs a piece of my mind. What do they think they are doing, throwing in the towel and inviting buggies in to build a home like that? It did make me think a bit about what I should be doing, rather than what I have been doing, to maintain my health. For example… I have to admit, although I’ve never been that much of a sweets girl, ever since I got pregnant with Toddler Yum, I have developed something of a chocolate habit. I like the dark stuff, mind you, none of that nasty sickeningly sweet candy bar or drugstore chocolate box chocolates for me! But still, even though dark chocolate supposedly has some beneficial properties, it contains sugar that I know very well doesn’t do anything good for me. In fact, when I eat sugar, the crash makes me cranky and feel a little bit like someone is scratching my brain, ever so annoyingly. Do any of you ever get that feeling? Maybe it is just me.

But anyway, getting sick and not having the energy to cook good (or bad) food for myself did make me think about my diet and the things that I know are good for me and make me feel good. I stopped the chocolate habit cold turkey, and turned towards the good stuff. Kale is one of those things that makes me feel good. I like to buy it from Whole Foods because they have organic kale in all kinds of varieties, or even better, from the Farmer’s Market when it is in season. The other day, though, the DH took me to my follow up-checkup on my lungs (because he is a sweetie) and I was feeling so much better that we decided to get lunch out together.

Calafia Cafe
Town & Country Village Suite 130
855 El Camino Real (at Embarcadero Road)
Palo Alto California
(650) 322-9200

I had read about Calafia Palo Alto being a good restaurant with a gluten-free menu, and I’d passed it numerous times in the Palo Alto Town and Country square, but I’d never actually eaten there. Half of the restaurant is a deli, and I’m easily intimidated by delis. However, the other half of the restaurant is a nice, sit-down restaurant with menus, and we decided to get a table. I was happy to see the gluten-free labeml on many of their dishes, but weirdly enough, I was even happier to see that they split the menu in half between vegetarian and omnivore options. They even labeled their vegan dishes. Unfortunately, I wasn’t actually that hungry because I had eaten a very full and nutritious breakfast (leftover Dal made my the DH the night before, my hero!). But I decided to order their Braised Greens with Almond Butter, which they describe on their menu as: “rainbow swiss chard, sautéed with shallots, glazed with cider vinegar and finished with a vegan turmeric scented almond butter,
dried cranberries and walnuts.” The small dish that arrived wasn’t very dramatic, but when I took a bite I could literally feel my blood being supercharged with nutrition. The funny thing is, I wasn’t completely in love with the balance of flavor. I could taste cayenne more than turmeric in the almond butter, and was a trifle spicy for me after years of cooking for a DH with a sensitive tummy and now a toddler who despises spiciness. At the same time, I felt so good as I ate it and I was ultimately very happy with it. It was also novel because it was both like something I might cook for myself but at the same time not with the exact balance of flavor I would choose. How often can you go out to eat and feel like you’re getting a more nutritious meal than you would have at home? That is why I fell in love with this restaurant and would go back in a heartbeat. They had an intriguing assortment of specialty smoothie beverages, and tons of entrees and other dishes marked gluten-free and vegetarian. The DH was also happy, although he ordered a gluten menu item of what he called a “salad pizza”- a pizza with goat and blue cheese with a gorgeous pile of arugula on top. (They don’t offer gluten-free pizza, but plenty of other places do so I didn’t mind.)

I did some reading and found out that Calafia was started by a chef named Charlie Ayers that was the head chef at Google for six years after being a caterer for the Grateful Dead. Not only that, but he has his own book called Food 2.0: Secrets from the Chef Who Fed Google. According to the booklist description, “Raw, organic, and fermented is Charlie s mantra, which is reflected in more than 90 easy-to-prepare recipes, whether it s a Kick-start Breakfast, a Power Lunch, or a Light, Bright Dinner. And, following the world-famous formula Charlie used at Google headquarters, the meals and snacks are designed to feed your brain exactly what it needs at different points throughout the workday.” It has been a while since I went to a restaurant that I found as exciting as this one, and after reading more about the chef I can understand why. It isn’t a raw-foods cookbook, and not even a vegetarian cookbook, but I was intrigued enough by the description that I ordered a used copy for myself. I’ll let you know how I like it!

Anyway, their braised green recipe with almond sauce was a delightful restaurant offering and also got me thinking about how I might try my own (very different) version when I brought home some tasty organic kale from the farmer’s market this weekend. Here’s my take on it, which met with approval from my omnivorous dad and allergy-sensitive mother. Toddler Yum found it to be too much green for her, but since she scarfs down raw broccoli, cauliflower, and roasted chickpeas, I think I’ll overlook this temporary disdain for kale. It took me some years to develop a love affair with kale, after all, and now it is my favorite breakfast, lunch, and dinner menu item! I hope you enjoy this recipe for a vegan almond sauce kale recipe as much as we did.

One of my favorite things about the place was that parents provided their own healthy lunches and snack supplements. But I started running out of ideas for things to send to school with Kira. She could only have fruit, crackers, pretzels, and snap peas so many times before it got old. One day I was somehow reminded of a recipe that appeared on many blogger’s pages some time back for roasted crunchy chickpeas. They were a high-protein, nutritious snack that didn’t need to be refrigerated, and it occurred to me that they might be perfect for her nut-free lunchbox. That morning I roasted up a batch and offered them to Toddler Yum. To my delight, she scarfed them down and loved the crunchiness of them. “Crunchy Chickpeas! I want more crunchy chickpeas,” she exclaimed, gobbling them up. I stole some of the batch and had to admit that they were indeed a tasty snack. More than a dozen batches later, they’ve become a household favorite with everyone from my carnivorous dad, low-carb mother, nutritional yeast fan DH and needless to say, me and toddler yum.
I know it has been a little while since I posted. The reason is that we’ve been quite sick with a cold that just wouldn’t quit. Toddler Yum’s cold turned into ear infections, and mine (as well as my mother’s) turned into pneumonia. So, I write this reclining on the couch, with the dear senior cat ra snoring and purring on my ankle and Downton Abbey playing on the television. The DH has been cooking soups for me all day, and roasting vegetables, and roasting chickpeas, and baking gluten-free french bread and brownies. Do I know how to pick them or what!

Stay tuned for any delicious recipes he comes up with… and the next sign up for Adopt a Gluten-free Blogger in early February.

Preheat oven to 400f. Line a large baking sheet with parchment paper. Drain chickpea in a strainer. You may rinse if you wish to get rid of some of the salt. Put in a bowl lined with a cloth towel. Drizzle your oil over the chickpeas and evenly distribute over the chickpeas. Pour the chickpeas onto the baking sheet in a single layer and sprinkle with your herb blend, herbamare, smoked paprika, and then nutritional yeast. Roast for 30-40 minutes. If you like them extra crunchy, but don’t want to run the risk of burning them, you can turn off the oven and keep the chickpeas in the oven until they have reached a desired level of crunchiness.

I had that experience some time back with By the Bay’s potato knish using Chebe crust as the pastry for knish. I liked it so much I started using Chebe for pastry for everything- spinach pie tartlets, samosas, cranberry apple turnovers. I took it so far that I got a reputation as “that Chebe girl” and the company approached me to develop some recipes and do a photo for their cinnamon mix packaging. True story!

I styled and photographed the photo on their last soft package mix for cinnamon Chebe. Of course, just recently they got entirely new packaging in fancy new boxes. I guess I’ll have to frame the remaining package in my pantry! But I digress.

So, about those recipes. I think you all know my friend Ali Segersten with the blog at Whole Life Nutrition Kitchen, Whole Life Nutrition Cookbook, and a new cookbook coming out soon. I adopted her some time ago for Adopt a Gluten-free Blogger. Way back in July she had this amazing recipe for Dairy-free Creamed Kale that I could eat like candy, I swear. Instead of using those tasteless packaged dairy-free milks, Ali used all fresh, real ingredients and make the creamy sauce with cashews. I just loved this recipe, and started thinking about other ways to use cashews as a creamy sauce in recipes.* I tried a creamed broccoli/cauliflower recipe, and it was good but not spectacular. But then the other night I was staring at my pantry trying to figure out what to make for dinner, and I was trying to think of how to make pasta interesting but not so interesting that Toddler Yum would snub it. We also had this huge container of mushrooms from Costco staring glossily back at me in the refrigerator, and it occurred to me that a cashew, dairy-free cream sauce would make a great mushroom alfredo. I seared some mushrooms and chard from our garden and added grated zucchini for bulk and sneaky mama veggie quotient and reduced the heck out of that cashew cream sauce. I also popped some white sweet potato “fries” in the oven to roast as a side dish.

At first I was going to make some plain pasta for the dear toddler, who can be relied on to ask for “plain, mama, plain pasta”. But then I thought that since she has never met a cashew dish she didn’t like, I’d try serving her the alfredo. The mushrooms were picked out immediately, and she eyed the chard very suspiciously, but she slurped down the pasta in sauce like a starving puppy and asked for more. My girl had four helpings before the night was out! And before you get worried, she had skipped the (disgusting) lunch at her daycare and had recently recovered from a tummy bug, so I think she was ready for a serious calorie infusion. The picky DH, who can be very skeptical of dairy-free sauces, dove in with gusto, and it goes without saying that I ate more than my fair share. Success!

I would definitely make this recipe again, and might just have to try this cashew sauce in some other classic creamy recipes. If you have a vitamix, I think the creamy sauce will be even more creamy, but the texture with my (pathetically weak) blender reminded me of the texture of melted parmesan regianno bits, so it worked well for us. These photos were taken the following day when the greedy pasta had drank up a lot of the sauce. It tasted good reheated but was most spectacular freshly made. Also, I used the new Trader Joe’s gluten-free corn spaghetti, and thought it worked well. A brown rice (Tinkyada) or my all time my favorite gluten-free pasta by Le Veneziane might make it even better!
Heat oil on medium-high in a large cast iron or stainless steel skillet. Saute your onion until translucent. Then combine translucent onion, soaked and drained cashews, nutritional yeast, water, vinegar and herbamare in a blender. Blend until you have a creamy sauce. Reserve.

Boil pasta until al dente.

Heat additional oil (if needed) in your pan on medium-high and add your sliced mushrooms in a single layer on the pan. Season with freshly grated black pepper and herbamare. You may have to do several batches. Brown one side and then turn over to brown the other side. Remove from pan and reserve while you brown the remaining mushrooms. Add your slivered chard to the last batch of mushrooms and sautee them until they wilt and start to brown. Sprinkle on your grated zucchini and let it soften slightly. Pour on your sauce and let it thicken.

Best the first night it is made, but can be reheated too. I think I might save any uneaten pasta separate from the sauce for the next day and combine them right before heating so that the pasta doesn’t absorb too much of the sauce and you get more creamy liquid for leftovers.

Thanks to this Gluten-free Vegetarian Thanksgiving event, I think I have a new favorite blog! When Hero Beth of Tasty Yummies signed up to participate in this event, I knew I was in for a treat when she started talking about developing not one but two terrific new recipes for the event. And besides, you know I have a weakness for Yummy recipes! They both sounded so good, I could see why she couldn’t pick just one! Her first recipe is for a gluten-free, vegetarian mushroom stuffing that she baked in a muffin tin to make the most adorable stuffing “rolls” I’ve ever seen. She considered calling them stuffing muffins but found the title unappetizing. Since when I bake yeast breads in muffin tins I call them rolls, I think it would be a very fitting title for this extremely yummy-looking recipe. The only think is that now I’m in a quandry. I absolutely have to make my beloved portobella mushroom stuffed acorn squash recipe which has a delicious stuffing. But her recipe sounds so good. I know! I always have leftover stuffing. This year I think I’ll bake it in muffin tins! Whee!!!

As I mentioned Hero Beth made TWO recipes. The other recipes is a Raw Butternut Squash and Kale Salad. This recipe excited me because in the back of my mind I have been daydreaming about what a raw Thanksgiving would look like, and this dish is a great start to an amazing raw foods menu. Also, weirdly enough, although Toddler Yum won’t touch cooked squash these days because it is that most suspicious of colors, orange, she has been known to grab raw squash and pumpkin and chow down with enthusiasm. I think if I made this salad (perhaps sans kale, which I would love but which Toddler Yum would undoubtedly pick out fastidiously) Toddler Yum just might gobble it up!

Hero Beth is a tough act to follow, but I thought I’d share one of my favorite vegetarian (vegan) sides- a nutritional yeast gravy that makes everything taste better, from roasted stuffed acorn squash, to mashed potatoes, to biscuits. I bet it would be awesome on Hero Beth’s gluten-free mushroom stuffing as well!

I serve this gravy every holiday with mashed potatoes and (on thanksgiving) my portabello stuffed acorn squash dish. I can’t believe I’ve been doing daily posts for our Gluten-free Vegetarian Thanksgiving event for over a week now! For this eighth episode of our event, my friend Alisa of Go Dairy Free posted an oat-free recipe for Maple-Walnut Pear Crisp along with a sister recipe for a Pecan Apple Crisp. I just love crisps, and she is absolutely right, they are one of the easiest and most forgiving types of fruit desserts if you are gluten and dairy-free. I love me some pie crust, but they are so much work. Crisps are fun, too, because they are one of the few gluten-free baking recipes that you can ad-lib and do “to feel”. I have been known to throw together many a crisp sans recipe. They are hard to mess up, honestly! Alisa’s recipe looks brilliant, of course. I love that she uses nuts AND gluten-free flour and sweetens with yummy brown sugar and maple syrup. Fabulously, naturally vegetarian and even vegan!

As Thanksgiving has gotten closer, I’ve been finalizing my own Thanksgiving menu. Here’s what I’m thinking.

For our main dish, we’ll have a recipe that has signified Thanksgiving to me ever since I first made it over twelve years ago living in Boulder, Colorado, My main dish for Portobella Mushroom Stuffed Acorn Squash (See below). I’ll top it with my favorite Nutritional Yeast Gravy. It might seem strange, but we’ve always enjoyed having some vegetarian or vegan Homemade baked beans with our Thanksgiving meal. This year I think I’ll make it in the our brand new slow cooker! We usually have plain old mashed potatoes, but this year Elise’s recipe for Duchess Potatoes (adapted to be dairy-free). Then I’ll make some Homemade Orange Apple Cranberry Sauce with a side of gluten-free, vegetarian homemade French Bread. For Desserts we will have pre-made gluten-free pie from Crave Bakery in Gluten-free Pumpkin Pie and Pecan Pie Varieties, as well as homemade dairy-free gluten-free pumpkin and Gluten-free Apple Pie.

What are you having for your Thanksgiving dinner menu?

Would you believe that this is the seventh day of our Vegetarian Thanksgiving Event? Today Nicole of Special Diet Creations seems to have read my mind, because she created a vegan and nearly raw Dairy-free, processed sugar-free cranberry cheesecake for our event. As I mentioned yesterday, Toddler Yum loves mommy’s raw cheesecake recipe. Not only that but she loves sipping heavily diluted cranberry juice with grandma, so I think she would really enjoy this recipe. It makes a beautiful presentation and would be perfect for any vegan guests to your Thanksgiving Dinner. Not only that but it doesn’t require the oven so won’t compete with your other recipes.

The DH just got back from a two week trip to Israel and I want to spend time with my honey, so I’ll make this quick. I had this recipe at some of my favorite adopted “parents’” house. You know how sometime you have parents and siblings etc. that you are born with, and then people that you meet that end up filling that role for you in your life without being related by blood? Well, Vic and Hallie take the role of gluten-free “Mom and Dad” at our local gluten-free potluck events. This is one of my favorite recipes that they made for us “kids” (although their pizza is also spectacular). Hallie is vegetarian, and a wonderful mom to her own daughters and us local kids too. I hope you enjoy it!

This recipe makes one large pie or large cake, or two smaller pies or two smaller cakes. I used one large pie pan and one small gratin type dish.
* Preheat the oven to 325° F. Grease the pie plates.
* Wash the cranberries or other fruit, leaving a little water on them.
* Place the fruit on the bottom of the pie plate. If you use nuts, put them on top of the fruit. Next sprinkle sugar over the top.
* In a mixing bowl, cream the remaining sugar with the eggs and butter. Stir in the vanilla extract and then finally fold in the flour and xanthan gum.
* Pour or spread the batter over the fruit.
* Bake for 35 – 45 minutes or until a cake tester inserted near the center of the crust comes out clean.
* Important step: Cool for 10 minutes and gently loosen the edges. If you are using a springform, it is particularly important to loosen the edges at this point. Wait until the pie cools completely before taking off the springform sides.

Notes

I used 1/2 tsp xanthan gum and think I would try 1/4 tsp. next time.

For the GF flour blend, Carol Fenster’s or Bette Hagman’s work well- I used a Brown rice version of Bette Hagman’s featherlight blend, but anything will work. Make sure it has a delicate flavor that won’t overwhelm the fruit.

You can use different fruits in this recipe, and adapt the flavorings as desired.

I think the pie tastes best cool, but it’s good either way. If you want to be really crazy you can add whipped cream or ice cream on top.

For this, our 6th installment of my Gluten-free Vegetarian Thanksgiving, we have a scrumptious dessert for you. Lauren from As Good as Gluten made a gluten-free pear custard pie that would be a wonderful addition to the Thanksgiving dinner table. I have to admit that pears are not my favorite fruit, but I bet that you could adapt it to be made with apples or persimmons and it would be great for those with unreasonable grudges against pears like myself. I love the idea of a custard based pie without a crust. It sounds so easy and yet channels the decadent flavor of the creme brulee, one of my personal favorites. This recipe would be a challenge to make vegan, but if you manage it I’d love to hear how you did it!

This recipe reminds me of my friend Ali’s latest recipe for a refined-sugar-free cranberry pear sauce. I bet even a curmudgeon like me wouldn’t mind the pear mixed in with cranberries!
Since we had a recipe that would be difficult to veganize, I thought I’d share a recipe I developed for a gluten-free vegan cheesecake. Actually looking at this recipe inspires me to make a new raw-foods based version. I know Toddler Yum would enjoy something made with her favorite raw-foods cashew-based cheesecake base. But, this recipe is certainly easy and delicious too. You could always make two vegan cheesecakes for Thanksgiving! I’m sure no one would object. What are your favorite gluten-free vegan dessert recipes? Share in the comments!

I hope you are enjoying my Gluten-free Vegetarian Thanksgiving Series. I’d love to hear what your favorite recipes have been so far.

Clean food processor.

Combine all the ingredients of your filling base in a food processor and process until smooth and creamy. Taste and adjust seasonings if desired. Remove 1 cup of the combined filling base and reserve. Now add the part two of the filling to the remaining filling base left in your food processor. (Pumpkin puree through the nutmeg and salt.) Process everything together. Taste and add a little more vanilla and/or salt if you think it needs it.

Now, take a clean spatula and carefully smooth the white, reserved filling base as the first cheesecake layer in all of your ramikins. Cover with pumpkin filling as the second cheesecake layer. You can leave a little mound in the center that is higher, but I’m not sure if it is necessary.

Place your ramikins in a baking dish with medium-steep sides. Fill the baking dish with hot water halfway up the sides of your ramikins, making sure not to get any water IN the ramikins.

Bake for 45- 50 minutes, cool to room temperature and then refrigerate for as long as possible- at least three hours. *sigh* Carefully remove from container or serve in ramikin. Enjoy!
