		<description>Hi Sea!! I am a recent latke convert...my hubby is Jewish and kept telling me I should make him a batch.  Growing up Catholic and in the mid-west, we didn&#039;t eat latkes so they were a mystery to me.  It was love at first bite.  Seriously.  Yours look so good with such a healthier balance of foods.

		<description>I really like the idea of squeezing out the liquid with a potato ricer.  That sounds very much neater than doing it by hand the way I&#039;ve done in the past.

Though actually, for potato pancakes, I&#039;ve stopped doing any draining of liquid.  I don&#039;t know if this would apply to zucchini-apple fritters, but for potato pancakes, frying them with the liquid included makes for a really nice consistency of latke, and it is much easier and less messy.

I always spike latkes with sweet potatoes or carrots, and sometimes with something green.  I like the idea of going completely potato-free -- I will definitely try that!</description>
