Has anyone figured out a substitute for wheat flour in not 100% buckwheat recipes? I&#039;ve just finished the book WHEAT BELLY (informative and frightening - a must-read for all) and won&#039;t be eating gluten again.</description>

		<description>I&#039;ve just fallen in love with buckwheat from a recipe in Joy of Cooking for a soured raised 100% buckwheat pancake (can be used for gallettes). As far as groats go look for recipes under Kasha (Russian name). I was introduced to Kasha Varnichkiss (spelling may be wrong) by a decendent of Russian Jews. It&#039;s a mix of buckwheat groats, noodles (can be rice, twisted or bow tie best) butter, eggs and seasonings. It&#039;s a wonderful dish! Also, try Kasha mixed with beans; it&#039;s versitile and gluten free.</description>

These were delicate little bundles, I must say- one of the little bundles above did rip a little at the green onion ribbon, but luckily it didn&#039;t show too much in the photo. I would say go for the wrapped chopped veggies but maybe try &quot;the smart woman&#039;s pouch&quot; design... I think it is number two above, unless you don&#039;t mind tossing some crepes...

I grew up eating buckwheat all my life, so I am surprised at how you have crimped this. I always find my buckwheat pancakes break when folded. How have you pulled off such a tricky maneuver,  you clever gal??? :-)

Would these cuties hold up to stir fried chopped veggies as in &quot;dumplings&quot; might I dare?
