   I&#039;m sorry to hear that your recipe didn&#039;t work well. The first time I made rasgulla I ended up with hard little disks that, like yours, didn&#039;t get spongy. My problem was that I had hand kneaded the curd and hadn&#039;t done it for long enough so the dough was just too lumpy. For me, the secret was using a food processor. It was powerful enough to really break down the protein in the curd and change the texture. The perfect texture was sleek, creamy and glossy- like taffy or shiny icing. The second problem I had was that I let the cheese balls dry out- so make sure that you cover them with a damp cloth immediately after you form them- so they never sit out without being covered with a damp cloth. I never had the problem of them breaking up, but I suspect it might be an issue of the texture or that they weren&#039;t formed into a ball firmly enough? 

I hope this helps- rasgulla is tricky but so delicious when it works.
