Can anyone out there recommend a safe gluten-free tortilla? I'd like to just be able to buy something commercial in the store and use it, but I didn't come across any brands I was willing to take a chance on. I'm very sensitive to gluten so it would need to be from a gluten-free manufacturing plant.

This sounds fab. I have just discovered the wonder of enchiladas at my local Chiquitos restaurant AND have discovered Amy's meals in UK supermarkets! I will definitely be trying this recipe.

I hope the stocking of the freezer goes well so that you have loads of time to enjoy baby Yum!

sounds great! I just read in the girlfriends guide to pregnancy that activiites like madly cooking to have meals ready is a sign of "nesting" so hopefully the baby will be here soon! BTW, I have a recipe I found online I use as an enchilada sauce which is very easy to make:

I think I'll try this recipe as soon as I break down and buy that tortilla press. I'm hooked on homemade tortillas but now want the press so they come out thinner and speed up the rolling process.
