With polenta, you really want to follow the directions on the box scrupulously. Instructions vary depending on the texture of the meal. If you add too little cornmeal or too much, or pour it in too suddenly, it will give icky results. DH was trying to wing it one time and grabbed the box, poured in some cornmeal straight into boiling water and it seized up horribly. He thought that box of corn meal wouldn&#039;t work for polenta- but I grabbed the box, followed the instructions, and it worked perfectly! 

For good set polenta, you want to leave the grits on the burner for quite a while and get it nice and thick. Then, stir in any cheese and quickly pour or pat out into a pan with a lining that you can easily remove. Just leave it alone and let it cool- it will naturally harden. 

Happy polenta-ing!
