Sounds like a wonderful menu. Thanks for sharing. I’d love the recipe for the spinach pie. And do you make your own thai & sweet and sour sauces? It’s hard to find GF ones. I usually make my own, but would love a store-bought one for those times I need something quick.

I am loving that there are more of us gluten free girlies sharing on Menu Plan Monday! Your menu looks great! We were the vegan family “back in the day” pre-celiac. I used to make a kicking seitan roast…sigh. I can’t wait to check out all the tasty things on your blog. Thanks for sharing!
