Menu of the Week: Meal Plan Monday and Gluten Free Menu Swap

I’m sorry to say that last week’s menu did NOT go according to plan. Oh, we did make some of it… like, the potato knishes, the caponata pasta, Sweet and Sour Slow Cooker tofu, and even the bok choy stir fry. But, maybe because I’d been so ambitious with ideas for menu items AND we got really into re-designing the site, a lot of dishes got left by the wayside. We did go out to Outback Steakhouse and dine off their gluten-free menu (gotta love that thunder from down under, even though it threatens a serious sugar-chocolate overdose), so that was a special treat. Anyway, here’s the menu for this week, all filched from last week’s menu. They were all good ideas that just didn’t work out at the time… As always, I posted my menu with Org Junkie and at the host of this week’s gluten-free menu swap, Lilac Kitchen. The theme for the gluten-free menu swap this week is the TOMATO.

Monday: Asian
steamed sesame white rice
szechuan pepper oil asparagus
Japanese kabocha pumpkin salad

Tuesday: Thai
Baby eggplant in nut sauce on rice pasta

Thursday: Irish
Vegan Pot Pie with improved crust

Saturday: Mexican
Homemade corn masa “pizza” with chipotle salsa base, cheese, sundried tomato “mexican seasoning” pesto with avocado

This week was all about updating the look and organization of the Book of Yum, so I didn’t post much. My first post with our new design was on
Easy and Frugal Potato Latkes AND Spaghetti Squash Lasagna.

This week I will be posting about all the changes made to the site, but in the meantime you can play around. By the way, I realize that the posts are currently a little bit hard to read- we’re having a style sheet issue- for some reason the site is not allowing paragraph breaks. But, never fear, we’ll get the kinks out this week! In the meantime- isn’t change nice?

Due to Memorial Day weekend and all the other blog stuff, there won’t be a dressing of the week this week, but I’ll have a proper gorgeous salad and dressing for you next week, honest. Hope you had an enjoyable extra-long weekend with your family!

  2. Your whole site looks amazing… I have only discovered you in the last 2 days and I am so impressed with your recipes and recommendations. I simply must find where they sell spaghetti squash in Australia as it isn’t easily found but I have to make that lasagna recipe!

    I think this is the first time I have ever posted. Been lurking for a long time. Love the grilled tofu and southern fried tofu recipes!

    Would love the sweet and sour slow-cooker tofu recipe or where I can find it?

    Also, fell in love with stir-fried bok choy and greens while we were in China for a week in March – how do you make yours?

    Hi Ginger- Thank you! No new camera. I’ve had a little more time to take the dishes into good lighting, in some cases… but, no real changes. :)

    Hi Renee- Yay! A new commenter! I love that. The sweet and sour slow cooker recipe was a huge disappointment, but you can find it (As a chicken recipe) in the “not your mother’s slow cooker” cookbook. I’ll be making a non-slow cooker version one of these days. And, we’re working on perfecting our greens- we like them in a nice sauce. I’ll try to get one posted for you soon!
