Menu of the Week: Menu Plan Monday and Gluten Free Menu Swap

Monday: Vietnamese
Coconut Crepes with crunchy veggie filling with sweet chili sauce [6] (tasty but needs some tweaking)
(Modified to be Vegetarian, and Nut-free, naturally dairy-free)
Tuesday: Mediterranean
Mediterranean-Style Eggplant and Chickpea Stew from pg. 42 of “The Gluten-Free Vegetarian Kitchen”
with brown rice
Thursday: Chinese/ Fusion
Orange Tofu (think Orange Chicken, but with Tofu instead) (Very good, post will follow)
[Raw] Marinated Baby Bok Choy Salad, inspired by Mars’ review [7]
Rice
Friday: Italian
Fresh Basil Mozzarella Pizza with homemade Gluten-Free Pizza crust by Carol Fenster (Converted to be Vegetarian)- possible Vegan topping as well, if I have time to make both. (Delicious! I made both a vegan version and dairy version. Post to follow.)
Snacks: Baked Rainbow Potato Crisps with fresh rosemary
Baked Goods: Zucchini Bread with Coconut Flour (a modified version of this recipe [7])
The host of this week’s Gluten-Free Menu Swap is Aprovechar [8] and the ingredient of the week is the turnip. I also love submitting my menus to Organizing Junkie’s Meal Plan Monday as well, so head on over there for some great menu plans. :)
