Menu of the Week: Menu Plan Monday and Gluten Free Menu Swap

Guess what?! DH and I are flying to FLORIDA this Wednesday night to stay at our family’s time share… If anyone has any GF restaurant, shopping, or bakery tips for the Captiva Island area, I’d love to hear about it! I should have internet access so I hope to post “on the road” – but this exciting plan means a little bit of a different kind of menu plan.

Dinners
Sunday: Greek (Mountain View)
Vegetarian Eggplant Moussaka from Vegetarian Meat and Potatoes Cookbook
with Rice (Note: Dish was ok but not noteworthy…)

Tuesday: Preparation
Bake fresh bread to take to Florida

Thursday: Happy Valentine’s Day!- Thai (Captiva Island, Florida)
Summer Rolls with Peanut Sauce
Coconut Rice
Protein of family’s choice (not prepared by me, haha)
for dessert?
Grilled Fruit Satays with Pineapple coconut peanut sauce and Chocolate fruit fondue (From Peanut Butter Planet Cookbook)

Friday: Mediterranean
Savory Feta Polenta with fresh herbs
Salmon or prawns (lucky DH gets to make this)
Roasted Asparagus
Aunt Joan’s summer salad

Saturday: Italian Fusion
Risotto (variation)
Grilled Sesame Tofu
Chili Garlic Roasted Broccoli Recipe

Sunday: Flight back to Mountain View

With sandwiches (grilled cheese, anyone?) and leftovers for lunch. :)

PS I’ve been tagged something like 3 times this week, so I promise to give you your 7/8 juicy facts about me shortly! I may think of them while strolling the beach in florida… maybe while sipping coffee at some as-to-yet-be discovered coffeeshop… maybe while kissing my sweetie under the moon on Valentine’s Day (don’t worry, the facts won’t be THAT juicy, haha)… Can you tell I’m excited about our vacation??

  2. sounds DELISH as always Sea!! I’ve got to try those summer rolls sometime! I cannot seem to find those 100% rice wrappers anywhere. Can you buy those online?

    Do you have a recipe for the photo of the buckwheat cereal with salad? It looks amazing, a perfect blend of comfort food and freshness!!

    Carrie: I am pretty sure that these rice wrappers also have tapioca flour/starch in them. Have you tried looking in the international section of your grocery store? A Whole Foods will have them for sure.

  5. So I always have weird luck with buckwheat. What’s the buckwheat cereal from the pic made of? Just groats or a packaged cereal (it looks lighter than just groats)? Looks yummy. We’re having spring (summer) rolls with peanut sauce this week, too–I can’t wait!

    Hi Carrie, do you have an intolerance to tapioca starch? If not, the kind with tapioca starch will work fine… in fact, that’s probably what I’m using now.

    Hi ~M, You know, it was just something I threw together one morning for breakfast- basically, prepare cream of buckwheat cereal as if it were polenta, adding seasoning and herb goat cheese to taste. Then I chopped up fresh heirloom tomatoes and red peppers, and julienned fresh basil, sprinkled them with salt and lime juice (optional) and threw it on top of the cereal with some extra goat cheese. Corn kernels or any other veggies of choice would be nice too.

    Hi Kara- I used cream of Buckwheat- here’s an Amazon link to the exact product. Way tastier (sorry groats fans) than the groats, IMO.

    We had the summer rolls with the peanut sauce last night and it was great. I took a couple of rolls for lunch and they were just as good as last night. And the last little bit of the peanut sauce was the perfect accompaniment to my dessert – a banana =)

  8. Wow I had no idea there were so many gluten free blogs out there! I’ll have to spend some time looking over your recipe collection for my son who is allergic to gluten (as well as dairy, eggs, soy, nuts and fish).
