Menu of the Week: Menu Plan Monday and Gluten Free Menu Swap

islandbreaky.jpgThe theme for the Gluten Free Menu swap this week is the BANANA, so I’ll be making a banana coconut muffin (with coconut flour) this week. Sounds good, yes? The swap is hosted this week by Natalie, the Gluten Free Mommy herself. And of course, I always love to post my menu plans with Org Junkie. Here it is!

Monday: Indian
Potato and Green Pea Stew
Rice Pilaf (yum! I MAY post about this)

Wednesday: Vegetarian
Rachel’s Barbecue Tempeh
Sauteed Green Beans
Corn Muffins

Friday: Vegan
Portobello Salad with Spicy Mustard Dressing (from Veganomicon) (I may share the dressing)
Homemade Sundried Tomato Brazillian Rolls (good but not spectacular. I’ll keep working on this recipe)

Saturday: Japanese
Fried Tofu Balls
And Onigiri Rice Balls (Very good! I’ll definitely be blogging about my special fusion onigiri!)

Baked Goods: Bette Hagman Potato Bread (reviewS to follow) and banana coconut muffins
