I just put up a recipe for Lemon-Poppy Joy squares (adapted from a lemon curd bar in The Joy of Cooking) that you might want to try. They're of course gluten-free, very fast and easy to make, and incredibly delicious. I've only made them once but they're going on my all-time favourite list.
