Menu of the Week: Menu Plan Monday and Gluten Free Menu Swap

An unexpectedly lovely combination- homemade corn tortillas used in goat cheese quesadillas topped with a version of this red chard caper saute [2], smoky salsa, goat yogurt and chopped fresh veggies including fresh torn basil. Nothing like a homemade tortilla, mmm.

The swap is hosted this week by Natalie, the Gluten Free Mommy herself, with thyme as our theme ingredient. And of course, I always love to post my menu plans with Org Junkie [3]. Here it is!

Monday: Italian
Foccacia with Caramelized Onion Marmalade

Wednesday: Venezuelan
Arepa Venezuelan Corn Cakes [6]
with refried beans
salsa or pico de gallo and

Thursday: Japanese
Fried Tofu Balls
Soba Buckwheat noodles

Saturday: Indian
Cauliflower Potato Curry
Teff Flatbread or Wild Rice

Snack: Indian Rice Idli with Chutney, Homemade Corn Tortillas

This week I fell in love with cauliflower and posted
a fabulous roasted garlic rosemary cauliflower recipe [7]
reviewed my adopted blogger Karina’s Vegan Mac and Cheese Recipe [8]

And continuing my new feature, the Dressing of the Week, last week we enjoyed a sweet and fruity STRAWBERRY DRESSING, adapted from Vegetarian Times. If you haven’t added strawberries to your salad, I highly recommend it. It really adds a whole new dimension to the salad experience!

Strawberry Dressing
Sauces & Condiments [9]  Vegetables [10]  American [11]  
1/2 cup sliced strawberries
3 tbsp. balsamic vinegar
3 tbsp. sugar
1/2 medium shallot or equivalent red onion
1/2 clove garlic, peeled
1/4 cup olive oil
1/4 cup water
Blend all ingredients except the olive oil and water. Add your water, combine, and then slowly add your olive oil and let emulsify. Enjoy!
This recipe originally contained an entire CUP of olive oil. Since I don’t really want to consume that much oil in a week (cough cough) I lightened it. You can play with the olive oil and water mixture, or add more vinegar to taste.

Yummy additions to a salad with this dressing:
Goat Cheese
Pine Nuts

Definitely add some fresh strawberries to your salad to celebrate the strawberry dressing!
