I&#039;m going to have my daughter, Lindsay, take a look at this as she eats vegetarian. She&#039;s always looking for good recipes and you&#039;ve got an abundance here. Oh, congratulations on your pregnancy - it&#039;s so exciting! Your Dad called me just after he found and sounded like he was ready to burst at the seams - he&#039;s SO proud! 		<description>Hi M, I agree, dried apple would be a good addition. I agree, the amount of agave/honey is a little unusual. I was basing it off the original Pamela&#039;s recipe that I modified- they suggested either 2/3 cup honey or 1/2 cup sugar. The only thing I can think is that the recipe is a bit dry so maybe they were thinking the extra moisture would be a good thing. (The dryness is why I added applesauce and it evened things out beautifully).

		<description>These muffins look tasty...I love muffins.  I bet they&#039;d be good with dried apple bits too!  But I&#039;m confused about the amount of agave/honey versus sugar...I thought you usually use less agave than regular sugar.</description>
