You have inspired me! Every year we go to California for 2 weeks. Last year, I did make some food in my room, but there was no where to cook. I made salads and lunch meat, hummus. By the end of the trip I was sick from cc because we had to eat out so much. This year we will have a kitchen with a 2 burner stove. I know we will want to eat out at some of our favorite places but, I will be cooking a lot of the time to cut down on my chances of getting sick. I am both nervous and excited and hope to be able to blog about it. Your grill tofu looks wonderful! I hope I can do as well as you have!

Hi Tracy, Ooh, I'm so jealous. We loved the surroundings at Captiva Island, but it feels a little subdued- not too many people seem to be vacationing there anymore. I think if we were to get our own time share (currently totally not in the budget, haha) we would do it somewhere just as beautiful but with more hopping shops and restaurants. Captiva is amazingly beautiful though...

Hey Rochelle, Thanks for your tips! I was planning to make bread for this trip, even though we were only there 3 full nights, but I didn't have time. I was in class Wednesday until 6pm, and then had to rush home and leave for the airport by 7. It was exhausting! I definitely would bring pasta (probably Tinkyada, if it's for glutenoids too) if we were going to be there longer. That reminds me, actually- I did bring thai rice noodles for the summer rolls, I just didn't list them. I'll do that now. A nonstick pan is a great idea- the pan at the second condo was pretty dead and gluten issues aside, I hated using such a mucked up nonstick pan. Disposable cutting board- also a brilliant idea! As it was I was paranoid and hyper protective of the condo cutting board. Luckily it was very non-porous and easy to clean. I was terrified our suitcase would get lost but thank goodness, it made it. I also brought along some protein bars, and a precious mariposa brownie, on the plane, but except for the plane, I didn't eat the snacks much. The pretzels were great to have, though. Thanks for commenting- really useful tips!

We've stayed in condos several times since going gluten free. For week long vacations, we tend to bring even more food than you did, including gluten free pasta, Zone bars, Corn Thins, gf crackers, Instant breakfast, muffin mix, brownie mix and Pamela's baking mix for pancakes. Sometimes, I make a loaf of fresh bread right before we leave, so we have it for at least the first part of the week. I also bring along a frying pan, disposable cutting boards, and a pot, in case the condo cookware doesn't seem as if it will clean up well enough. One thing I learned on our last trip --don't pack all the gf food in one suitcase -- that suitcase was the one suitcase that got lost! Next time, I'm going to pack the gf essentials in carry on.

Excellent Sea! We purchased a time share just so we could have a kitchen when we travel. It's good hear your experience was so positive. Great photos of you and hubby, by the way!
