I made macaroni salad also, using similar recipe, and it was very good. However, the next day we tried to eat some of the leftover salad, but it was very hard and chewy. I added more dressing. but it didn't help. Can anyone give ideas as to what happened?

Well this is the second time I was directed to your blog from searching for GF recipes on Google! I loved your twice-baked potato recipe, so I have confidence that I will like your macaroni salad as well! I am going to try making this this weekend. :)

My mom has an ambrosia that I have made dairy free. The salad has apples, banana, pinapple, mandarin oranges in whatever ratio suits your taste. Instead of sour cream, I use soy yogurt. Vanilla or strawberry, plain would be good too but I can't usually find it. Mix it all together and add mini marshmallows. You can add coconut too if you like. I love it and it let's me keep some "yum" from when I was a kid

I'm sorry the brownies didn't turn out using almond milk. For Pamela's, I like to use coffee.

Funny- I'm finding now that I'm baking vegan, my gluten-free recipes turn out better using water or coffee as the liquid, rather than one of the alternative milks. I've no idea why. Funny, eh? ;)
