Avocado Mash
1 avocado
1 scallion, diced
1/4 of an english cucumber, cubed
1 small carrot, diced (or 1/2 regular carrot) OR other crunchy vegetable like jicama, radish etc. (about 1/4 cup)
1 or 2 tsp. GF tamari (to taste)
dash of garlic powder
light sesame seeds

Prepare vegetables. Cut avocado in half, remove pit, scoop out fruit, and mash. Add other ingredients and add seasoning. Enjoy as sandwich filling, veggie onigiri filling, or as a fancy appetizer using the avocado skins as a bowl. For an appetizer, you probably would want to double the recipe. Garnish with sprouts if desired.
