1/2 cup sliced strawberries
3 tbsp. balsamic vinegar
3 tbsp. sugar
1/2 medium shallot or equivalent red onion
1/2 clove garlic, peeled
1/4 cup olive oil
1/4 cup water
Blend all ingredients except the olive oil and water. Add your water, combine, and then slowly add your olive oil and let emulsify. Enjoy!
This recipe originally contained an entire CUP of olive oil. Since I don’t really want to consume that much oil in a week (cough cough) I lightened it. You can play with the olive oil and water mixture, or add more vinegar to taste.
