Sesame Soybean Sprout Recipe
1 lb fresh soybean sprouts
1/2 cup thinly sliced green onions
3 tsp sesame oil
1/2 to 1 tsp Korean red pepper flakes
1/2 tsp sea salt

Immerse soybean sprouts in a large strainer filled with water and let the husks float off of the sprouts. Drain. Bring 4 cups water to a boil and immerse your fresh, cleaned and soaked bean sprouts in the water. After they have simmered for five minutes, put them in a strainer and blanch by rinsing with cold water to cool sprouts and stop the cooking process. You want them still crunchy! Drain and pat dry. Mix sprouts, scallions, sesame oil, Korean red pepper, and salt together and let sit for a bit while flavors deepen, or enjoy right away.
This was surprisingly delightful, and DH gobbled it up! This is enough for 4 but if you are a small family, it’s something that is enjoyable as leftovers.
