Korean Cucumber Vinegar Pickles
4 Japanese/Korean cucumbers, sliced vertically at an angle
4 Tbsp. seasoned rice vinegar
4 tsp sugar
1 tsp salt
1/2 tsp Korean red pepper flakes
Combine all ingredients and let flavors deepen in the refrigerator while you prepare the rest of your meal. If your family likes things spicy you can double the red pepper flakes, but my DH doesn’t like spicy things, sniff.
