Honey Bear No-processed-Sugar CF GF Lemon Bar Recipe
Ingredients
3/8 cup finely ground brown rice flour
1/4 cup tapioca starch flour
1/8 cup teff flour
1/4 cup almond flour
1/4 cup unsweetened shredded coconut (not coconut flour)
1/4 tsp. xanthan gum
pinch of salt
3 tbsp. spectrum shortening + 1 tbsp. coconut oil (or more shortening)
2 tbsp. applesauce

Filling:
2 eggs
3/8 cup raw honey
1/8 cup agave nectar OR more raw honey
1/4 cup applesauce
2 tbsp fresh lemon juice
1/2 tsp baking powder
lemon zest, to taste (optional) OR 1/2 cup shredded unsweetened coconut

Directions
Cut out a piece of parchment paper to fit a square baking pan (8 or 9 inches.) Preheat oven to 350 degrees.

Combine all dry ingredients for crust and then add your oils and applesauce to make a dough. Press out into your square pan and bake for 12 minutes or until lightly browned.

Whisk your filling ingredients together and then pour over the baked crust.

Bake for 20-25 minutes, let cool, cut into bars and then serve.

If you like you can sprinkle them either with powdered sugar, or, if you really want no processed sugar at all, ground unsweetened coconut (Ground in a spice mill or coffee grinder).

Notes
This has a strong honey flavor. If you’d like it to be milder, try 1/8 cup honey and the rest agave nectar. If you like coconut oil more than I do, you could also use more coconut oil and no shortening, or less shortening. All applesauce instead of oils is not recommended, and olive oil is also not recommended as a straight substitution.
