Tired Mama’s Easy Red Chard Soup
Ingredients
2/3 fresh red chard bundle
1 vegetarian bullion cube
2 cups water
dab of tahini, to taste
toasted pine nuts
Directions
Cut off chard at point where there is no leaf, and discard the leftover stalk. Do NOT separate leaves from stalk where they grow together, though. Rinse and drain chard. Chop horizontally so you have rectangular pieces with a bit of stalk in the middle.

Meanwhile, heat 2 cups of water in an electric kettle, teapot, or in the microwave. Prepare a medium microwave safe bowl like Corningware. Take a little of your heated water and dissolve your bullion cube into it, mashing cube as necessary. Combine with remaining water in microwave safe bowl. Add your chopped chard and microwave on high for 3 minutes or until chard is done to taste.

To serve, pour a little of the broth into a bowl. Add a dab of tahini and whisk in until dissolved. Add a generous helping of chard and more broth. Stir a few times to combine ingredients. Garnish with toasted pine nuts, to taste.
