Gluten Free Smoky Almond Coated Pan Fried Okra Recipe
one half pound fresh okra, stems and tips removed, cut into chunks

1/2 cup gluten free blend (I used Bette Hagman’s Gourmet Blend)
1/2 cup almond meal
generous portion smoked paprika (non-spicy) or chipotle powder (spicy)
1/4 tsp. sage
generous amounts of salt to taste

1 egg, whisked
1 tbsp. coconut oil

Combine flour blend, almond meal, and spices in a low, flat bowl or plate with sides.

Whisk egg in a small bowl. Add the chopped okra to the egg wash and then immerse in batches in flour blend.

Melt coconut oil in nonstick pan and add breaded okra. When one side is brown, turn and brown the other side.
