Gluten-free Vegan Millet Apple Coconut Muffin Recipe
Ingredients
2 cups millet flour
Baking powder substitute (1/4 teaspoon baking soda, 1/2 teaspoon cream of tartar, and 1/4 teaspoon arrowroot starch)
1/2 tsp baking soda
1/2 tsp salt
1/2 c coconut oil, softened
1 c white sugar
3/4 c unsweetened applesauce
1/4 cup coconut milk w/ guar gum
1 tsp vanilla
1/8 to 1/4 cup diced dried apple (optional)
1 apple, peeled and sliced thinly and then cut in half again
1/2 tsp nutmeg
1/8 tsp cloves
Sprinkling of brown sugar
Directions
Grease a muffin tin with coconut oil and preheat oven to 375.

Combine apple slices, spices, and sprinkling of brown sugar in a small bowl.

In a large bowl, whisk together coconut oil, sugar, applesauce, coconut milk and vanilla.Create a mound in the middle of millet flour, baking powder substitute, baking soda, and salt, and whisk dry ingredients together as best as you can before folding into the moist ingredients. Add dried apple at the last minute and fold in.

Spoon into muffin tins until they are 3/4 full. Top with your apple slice mixture. Drizzle any extra brown sugar liquid in the bottom of the bowl on top and put in oven.

Bake for 20 minutes or until golden brown.
