Gluten-free Squash Refried Bean Tamales
Ingredients
Tamale dough:
1 cup cooked acorn squash (1/2 large squash)
3 cups vegetable broth
2 teaspoon kosher salt
3 cups masa harina for tamales
3/4 cup neutral flavor extra-virgin olive oil or other mild oil

Filling:
Refried Bean:
olive oil
1/2 onion
1 can organic beans (pinto, black bean)
oregano to taste
ground cumin to taste

1/2 onion
1 cup cooked acorn squash (1/2 large squash)
handful fresh cilantro
