Raw Zucchini noodles in Almond un-peanut sauce
2 or 3 zucchini, made into pasta with spiralizer or special grater
Diced bits of red, yellow or green pepper
1 medium tomato, cubed and lightly salted
Grated carrot
sprouts (optional)

3 tbsp. raw almond butter
whites from 2 scallions, minced
1 tsp. wheat-free soy sauce or coconut aminos
1 1/2 tbsp. coconut milk
juice from 1/2 whole lime
1 tsp. agave nectar or other sweetener of choice (sugar is fine)
water as needed to make smooth sauce
paprika or cayenne pepper to taste

Whisk sauce ingredients together. Taste and adjust seasonings as needed.

Drizzle on zucchini “pasta” and mix pepper and tomato into the pasta. Sprinkle with carrot and sprouts if you like and serve. Enjoy!
