Brown Rice Chestnut Pilaf

Ingredients
1 tbsp. olive oil or grapeseed oil
1 onion, diced 1 cup brown rice (short grain is fine) Herbamare or sea salt bouquet garni or other herbal blend 2 1/2 cups vegetable broth (i use gf vegetable bullion) 1/4 tsp toasted sesame oil 1 pkg. peeled chestnuts, chopped 1/4 cup dry roasted or raw cashews (optional) fresh basil, julienned (optional)
Directions
Heat oil in a medium-large soup pot, uncovered. *You will need a lid later, so make sure you have a lid for your pot available.* Add your diced onion and sautee until translucent. Add your brown rice and stir together. Fold the rice and onions together and heat for a few minutes. Add your herbamare and favorite herbal seasoning blend to the rice and stir gently. Pour in the vegetable broth, one cup at a time, mixing thoroughly. Season with sesame oil and add your chestnuts and cashews (if using).
