zucchini un-crabcakes
Ingredients
2 cups grated zucchini
salt
1/2 cup gluten-free breadcrumbs (1 piece of Udi’s bread toasted and food processed)
1/2 cup almond flour (I used 1/4 cup blanched and 1/4 cup Trader Joe’s)
1 egg
1 tsp shallot seasoning
1/2 tsp paprika (smoked and sweet or one or the other)
1 tsp dijon mustard
1 tbsp mayonnaise
juice of 1/2 of a lemon
1/4 cup chopped parsley
a few sprigs of fennel top
