low-ish carb dairy free mashed potatoes
4 new potatoes (yellow or red
1/3 cauliflower head
1/4 cup lite coconut milk
2 tbsp dairy free margarine
herbamare or your favorite salt blend
1 tbsp diced fresh dill
freshly grated pepper
wash and dice potatoes, add to pot of water and boil until fork tender.
cut florets off cauliflower and steam 5-10 minutes or until tender.
place steamed cauliflower and coconut milk in food processor and process until smooth and creamy. use ricer (or masher) to create smooth, lump free potato mash in a large bowl. fold in creamy cauliflower, add in your margarine and let melt. fold in fresh dill and season with herbamare and pepper. serve
